Wedges of a polarizer arranged in a circle with a crystalizing dish placed on the polarizer. Crystalizing dish are good because the bottom tends to be flat and the edges are uniform, unlike a beaker which has a pouring spout that show up when viewed on an overhead projector.
The other polarizer is usually hung over the lens of the overhead projector or placed in front of the camera if you use video.
The colors intensify the deeper the sugar layer.
